Product Description

A pre-blended powder base for dairy-free milk chocolate, formulated for bean-to-bar makers and stone melangers. Most plant-based alternatives use coarse flours — the result is a chalky mouthfeel and slow refining. This product starts from a liquid extract of authentic horchata de chufa, which provides a naturally rich, creamy flavour. By blending it with sunflower protein and removing the tigernuts woody fibres at the liquid stage before dehydration, we ensure the powder refines cleanly and produces a velvety, dairy-like texture. Before drying, the plant milk is slow-roasted under vacuum. This modulates the Maillard reactions precisely, developing the complex brown notes characteristic of traditional roller-dried milk powder or vacuum-dried milk crumb - but without the dairy.

Instructions for use

Handle the powder in the same way as any other dry powder ingredient in the production of chocolate. Standard preparation: Add cocoa butter or equivalent fats to the refiner. For milk chocolate add cocoa nibs or cocoa mass to the cocoa butter. Use heated air to melt the cocoa mixture. Once the cocoa mixture has melted and is free flowing, slowly add the sweetened plant-based m!lk powder and refine under tension. Once the mixture reaches the desired particle size and has been sufficiently conched add lecithin if required.

* Tiger nuts (Cyperus esculentus) are of Certified Valencian Origin as recognised by the EU Protected Designation of Origin (PDO).

Allergens: Our manufacturing facility handles a wide range of materials, as such this product may contain traces of peanuts, soya, tree nuts (almonds, hazelnut, pistachio and cashew nut) and oats (certified gluten free oats).
