Welcome to Tiger & Bean, the world's only manufacturer and supplier of dairy-free m!lk chocolate crumb. Our tailor-made products are designed for bean-to-bar chocolate makers, chefs and patisseries looking to create exquisitely flavoured vegan m!lk chocolate, and vegan white chocolate.

You might not be familiar with conventional dairy milk chocolate crumb (otherwise known as milk crumb), but it's a vital intermediate ingredient used in the manufacture of traditional dairy milk chocolate. Traditional dairy milk chocolate crumb is essentially, a dried, crystalline mixture of milk solids, sugar, and cocoa mass that undergoes a carefully controlled vacuum roasting process. This roasting process allows for flavour development, contributing subtle yet delicious toasted, caramel-like notes to the final chocolate.  

While crumb can transform the taste of traditional milk chocolate, at Tiger & Bean, we are passionate about facilitating the creation of delicious chocolate that everyone can enjoy. That's why we embarked on a mission to develop a new generation of crumb: Dairy-Free M!lk Chocolate Crumb

While the conventional "crumb process" relies on cow's milk, we've pioneered innovative techniques to create exceptional dairy-free versions using ingredients like tigernut, sunflower seed, and cashew nut. Our goal is to transform lacklustre vegan milk chocolate, by offering dairy-free crumb to some of the greatest chocolate makers in the world. 

Our current offerings includes, dairy-free, choco m!lk crumb made with added cocoa mass, and dairy-free, blond m!lk crumb made without cocoa mass, so that you can add your own single origin cocoa. 

Our unique crumb powders, offers a significant advantage to conventional powders used in the production of dairy-free chocolate, such as hydrolysed oat flour and rice syrup solids. These conventional plant-based alternatives to milk powder, lack the creaminess and nuanced flavour profile of dairy based ingredients. Our approach, harnessing the complex flavour profile developed through Maillard reactions inherent to our crumb process, which elevates the taste experience. These reactions bring a depth and richness often missing in inherently milder plant-based powders and chocolate bases.
